When you get used to this simple basic recipe, you'll be able to make a fried rice in just 10 minutes, using different vegetables you have on hand, leftover meats and even some fruits.

Here's what you'll see in this video:

First, I'm going to share with you couple of useful tips you should consider before even start the cooking.

From there I'm going to proceed with making 4 different recipes for fried rice, showing each one of them from scratch.

We'll start with most common version, it's onion, carrot and peas fried rice, with an egg and dash of soy sauce and sesame oil.

Second recipe use chicken, red bell pepper and green onions. Here I use leftover chicken breast, but you can use any piece of chicken meat you prefer or have on hand.

Also, when cooking minestrone it is important to add vegetables gradually, because you don't want to overcook it.

Finally, at the end of cooking it's common to add some pasta to make it even more hearty. What I like to do is to add handful or two of broken spaghetti or basmati rice. If you're looking for more low-carb soup options skip adding pasta or rice.

You can eat minestrone soup on its own, but it's even more special when served with some olive oil and grated parmesan cheese on top.

Here's what I cover in today's video.

First, I show you the most simple method to make a homemade pesto sauce. All you need to do is to place all the ingredients together and blend until you get the desired consistency.

Next, you need to cook the rice according to the package directions. How simple it is.

Everything you have to do to make this salad complete is to combine the pesto with cooked rice and serve alone or with your favorite topping.

Here I suggest cherry tomatoes, cubed mozzarella cheese or hard boiled egg to your desired level of softness.

PESTO RICE RECIPE

Ingredients

For pesto:
1/3 cup walnuts
1 clove garlic
1 cup fresh basil leaves
1/2 cup olive oil
1/2 cup grated parmesan cheese
salt and black pepper, to taste

For rice salad:
2 cups cooked rice
1/2 cup cherry tomatoes, halved
1/2 cup mozzarella cheese, cubed
2 hard boiled eggs

Preparation:

Place the rice in the pot or rice cooker, and cook according to the package direction.

In a blender or food processor, add all the pesto ingredients. Process until smooth.

In a large bowl add cooked rice and homemade pesto. Mix well until combined. Do this until the rice is still quite warm.

Serve warm or cold.

Top with cherry tomatoes, mozzarella cheese or hard boiled egg.

GREEK SALAD WITH CHICKEN RECIPE

Ingredients:

2 medium sized chicken breasts, skinless-boneless, halved to make four fillets
2 cups chopped tomatoes
2 cups chopped cucumbers
1/2 cup sliced red onions
1/2 cup chopped black olives

Chicken marinade:

1/3 cup Greek yogurt
1/4 cup olive oil
4 cloves garlic, minced
2 tsp dried oregano
2 tbsp white wine vinegar
1 tsp salt
1/2 tsp black pepper

Tzatziki dressing:

1 large cucumber
1 cup Greek yogurt
1/2 clove garlic, minced
2+1 tbsp white wine vinegar
3 tbsp olive oil
1 tbsp fresh dill, finely chopped
salt and black pepper, to taste

Greek yogurt dressing:

1/2 cup Greek yogurt
1 tbsp white wine vinegar
1 tsp honey
2 tbsp olive oil
1/2 tsp dried oregano
pinch of salt and black pepper

Lemon caper dressing:

3 tbsp lemon juice
1 tbsp mustard
1 tbsp capers, minced
1 tsp honey
1/4 cup olive oil
1 tbsp chopped parsley
salt and black pepper, to taste

Preparation:

In a large bowl, combine all marinade ingredients, add chicken fillets and mix well. Set aside for 30 minutes to 3 hours.

For homemade tzatziki, peel and grate the cucumber, sprinkle with some salt and 1 tbsp white wine vinegar, mix and set aside for 10 minutes.

Squeeze out as much excess liquid as possible and combine the cucumbers with other tzatziki ingredients.

For Greek yogurt dressing and Lemon caper dressing, simple combine all listed ingredients.

Chop all the veggies and proceed to the final step which is grilling or frying the marinated chicken.

Remove the chicken out of the fridge and scrape the marinade off the fillets.

In the skillet (or on the grill), over medium high heat, cook the chicken for 4 minutes on each side.

Let sit covered for a few minutes for juices to set.

Slice the chicken and assemble the salad.

In this video I'm going to show you how to make these easy and lemony fritters in three different ways.

First, I'm going to make a simple tomato sauce, which is so better option then using jarred tomato sauce, and it's done in just 15 minutes.

If you don't have a time to make any tomato sauce on your own, serve your ricotta fritters on top of rocket salad or slices of fresh tomato.

I prefer to gently fry the fritters in olive oil, because of the crust, but you can bake these inside the oven too.

Next, you'll learn how to make ricotta cheese on your own. Few simple steps and only 3 ingredients is more then enough to enjoy beautiful and creamy homemade ricotta.

Finally, I'll show you how to replace plain wheat flour in your cooking. What I love to do is to add ground oats in my recipes instead of plain flour. You'll see how to turn your oats into oat flour using three simple methods and kitchen tools you already have in your kitchen.

Making fried polenta doesn't require much time and you can make it two or three days earlier (the cooking part of the recipe).

First step is cooking polenta properly, not too watery and not too stiff, you'll only need four ingredients here.

Next, we have to shape and chil polenta in order to cut it into single pieces. To do that you'll need to place polenta into the fridge for at least 2 hours. And I'm going to show you the easiest way to do that.

Also, you'll see how to fry polenta cakes in order to have crispy edges.

When frying the polenta is done, you can choose to prepare one of the three quick 10-minute toppings I suggest.

Each one of the sauces is delicious in its own way and works so great with polenta.

Quick tomato sauce, easy mushroom ragout or sauteed white beans is what I suggest and what I like to eat with polenta, but feel free to serve these cakes with anything you desire.

CHICKEN PARMESAN MEATBALL RECIPE

Ingredients:

For meatballs:
1 pound ground chicken thighs
1/2 cup almond meal
1/2 cup grated Parmesan cheese
1 tbsp Italian seasoning
1/2 tsp garlic powder
1/2 tsp onion powder
2 tbsp parsley leaves, chopped
1/2 tsp salt
1/4 tsp black pepper
1 egg
2 tbsp olive oil

For easy marinara sauce:
1 28 oz can peeled tomatoes (or crushed tomatoes)
1/4 cup olive oil
3 cloves garlic, thinly sliced
1/2 tsp dried oregano
1/2 tsp dried basil
1/2 tsp salt
1/4 tsp black pepper

1 cup grated mozzarella cheese

Preparation:
In a bowl, combine seasonings first, almonds, Parmesan cheese, Italian seasoning, garlic powder, onion powder, parsley, salt, black pepper and egg.

Then you can add ground chicken and olive oil. Gently mix with the tip of your fingers, do not over-mix it.

Spoon about 2 tablespoons of mixture and form the meatballs using your hands.

Place the meatballs on a lined baking sheet and bake for 15 minutes at 400 degrees, or when meat thermometer in the center of meatball reaches 165 degrees.

Meanwhile, make the marinara sauce.

In a skillet, heat the olive oil over medium heat. Add the garlic and cook stirring for 1 minute.

Add the tomatoes, dried oregano, dried basil, salt and black pepper, and gently simmer for 15 minutes.

Place the meatballs into the marinara, sprinkle with grated mozzarella cheese and bake for 5 minutes, or until the cheese is nicely melted.

Serve with low carb mashed cauliflower, green salad or grilled zucchini.

In this video I'm going to show you how to make easy black bean salad.

In fact, this healthy salad is so simple to prepare and so satisfying, that it's perfect for a weeknight dinner.

Packed with tuna and crunchy vegetables, this salad is a great source of protein and fiber.

The base for this salad is cooked black beans and canned tuna, but as you can see I made couple of twists using different combinations of vegetables.

Here's a quick list of what you're about to learn:

First, I'll show you how to cook black beans from scratch and have them soft and tender (not mushy) every time.

Next, you'll learn how to prepare quick honey lime salad dressing, which you can use in other recipes as well.

Finally, I'll show you three different ways how to turn this salad into something really special. First variation is: red onions, tomato and avocado. Second variation is: red pepper, cucumber and green onions. And third variation is: sweet corn, celery and parsley.

Ingredients:

Black bean salad (Variation 1):
2 cups cooked black beans
1 can tuna
1/2 cup red onions, chopped
1/2 cup tomato, chopped
1/2 avocado, chopped

Black bean salad (Variation 2):
2 cups cooked black beans
1 can tuna
1/2 cup red pepper, chopped
1/2 cup cucumber, chopped
1/2 cup green onions, chopped

Black bean salad (Variation 3):
2 cups cooked black beans
1 can tuna
1/2 cup sweet corn kernels
1/2 cup celery, chopped
1/2 cup parsley, chopped

Honey lime salad dressing:
1/4 cup olive oil
juice of half lime
1/2 tsp salt
1/4 tsp black pepper
1 tsp honey
1/2 tsp dried oregano

Preparation:

In a large bowl, flake the tuna with a fork. Add all other ingredients, pour dressing over salad and toss to combine.

Taste and adjust seasonings, if needed.

Garnish with crumbled feta, toasted sesame seeds or chopped green onions.

Tips for cooking black beans from dried:

Place dried black beans into the pot, cover with water, add 1 small onion, 2 cloves of garlic and couple of bay leaves. Bring to a boil and cook on low heat for 45 minutes. There's no need to add salt at this stage.

Today you're going to learn how to make healthy mug cake in microwave.

This quick 3 ingredient cake is completely made from whole ingredients, it's refined sugar free and gluten free.

Here's the list of what I cover in this video.

First, to make the cake batter, we're going to mix these 3 basic ingredients inside the mug. The batter should be the right consistency, otherwise your cake will be too dry.

Next, cooking time is what really matters here. You should microwave this mug cake from 30 seconds and no longer than 1 minute, depends on your microwave.

In this video I decided to test this mug cake recipe using three different sweeteners.

The first one I made was with honey, which I use most of the time in my sweet recipes. It's not too sweet, and the peanut butter flavor comes through nicely in this cake.

The second one I decided to sweeten with banana. Make sure to use ripe banana which is sweet and soft. Peanut butter and banana is one of everyone's favorite flavor combinations, was so delicious!

The last one was with date paste, which is basically blended dates with some water. The texture was so moist and tender. Dates are such a great sweetener, and this is the peanut butter mug cake I liked the most.

Preparation:
For the mug cake, in your favorite mug, add peanut butter and egg.

Give a really good stir, until well incorporated. If batter is too sticky, add 1 tbsp of water. Mix well.

Now, add your 3rd ingredient, which is the sweetener. Choose between these 3 options: honey, banana or date paste.

In order to make a date paste, in a food processor, add dates and hot water. Process until smooth.

Place the mug into the microwave and cook for 30-60 seconds, depending on how powerful your microwave is. Start with microwaving for 30 seconds, then continue to cook in 10-second intervals, until is set.

First, I'll show you how simple it is to prepare a homemade vegetable stock.

Next, you'll see two ways how to prepare this soup. You can cook vegetables in a pan or instant pot, or you can roast the veggies in the oven, it's up to you.

After 30 minutes of cooking (or 40 minutes of roasting) you just have to blend the carrots into a creamy soup.

Finish the soup with maple syrup and peanut butter, to add a bit of sweetness and make it even more creamy.

HEALTHY CARROT SOUP RECIPE

Ingredients:

1 large onion
4 cloves garlic
2 tbsp grated ginger
4 cups chopped carrot
4 cups vegetable stock
1 cup coconut milk
salt and black pepper, to taste
2 tbsp maple syrup
2 tbsp peanut butter
2 tbps olive oil

Preparation:

Heat olive oil in a pot, over medium heat. Add the onions, garlic, grated ginger and carrots and saute for 10 minutes, until softened.

Pour in vegetable stock and coconut milk, and season with salt and black pepper. Bring to a boil, lower the heat, cover and simmer for 20 minutes.

When vegetables are cooked, puree with an immersion blender.

Add maple syrup and peanut butter, and stir to combine.

You can serve this soup with sriracha, crushed peanuts, or cayenne pepper and green onions.

In today's recipe learn how to make healthy sloppy joes.

In fact, these sloppy joes are full of flavor and low in calorie, made of ground turkey and black beans and served on homemade whole wheat buns.

Here are the tips I’m going to cover in today’s video:

First up, we have the veggie load. I'll show you how easy it is to add different vegetables in sloppy joe mixture and make it a way more healthier.

The second is the step-by-step cooking procedure, and it starts with sauteing the veggies. You don't start with cooking the ground turkey, because you don't want to make the meat too dry. If cooking with ground beef, start with browning the beef first.

Next up, we have a no sugar tomato sauce. Traditional sloppy joes use ketchup or bbq sauce as the sauce base, but that's not the case with these healthy sloppy joes.

Finally, you'll need to cook the meat and bean mixture for 15 minutes, and you don't want to have it too sloppy, not too dry either.

I serve sloppy joes in 3 different ways. First I use butter toasted whole wheat buns with sliced pickles on top.

Then, for low-carb version, I add some mixture in lettuce leaves and enjoy it as salad wraps. Finally, I spoon some mixture in halves of an avocado.

TURKEY AND BLACK BEAN SLOPPY JOES
Ingredients:
2 tbsp olive oil
1 medium onion, finely chopped
1 medium carrot, grated
1 pound ground turkey
1/2 red bell pepper, finely chopped
3 cloves garlic, minced
1 cup tomato sauce
1 tbsp honey
1 tbsp mustard
1 tbsp white wine vinegar
2 tbsp Worcestershire sauce
1/2 tsp smoked paprika
1 cup cooked black beans
Salt and black pepper, to taste
6 whole wheat buns
1 cup shredded cheddar cheese

Preparation:
Heat olive oil in a large saucepan, over medium-high heat. Add the onion and carrots and cook until slightly softened, for about 2 minutes.

Add the ground turkey, and cook until no longer pink, for about 5 minutes.

Add the red bell pepper and garlic, and cook for 2 more minutes.

Add the tomato sauce, Worcestershire sauce, honey, vinegar, mustard and smoked paprika. Season with salt and black pepper, and pour in 1-2 cups water. Add the black beans. Stir well and let it simmer over medium-low heat for about 15 minutes.

Taste and adjust seasonings, if needed.

Serve on whole wheat buns with sliced pickles on top.

For low-carb dinner serve the sloppy joe mixture in salad wraps or spoon into halves of an avocado.

NO BAKE CHEESECAKE RECIPE

Ingredients:
Crust:
3/4 cup quick cooking oats (70g)
1/2 cup ground oats (50g)
1 tbsp cocoa powder
2 tbsp melted butter
1 tbsp honey
2-3 tbsp water

Filling:
1 cup cottage cheese (250g)
1/3 cup peanut butter (85g)
2 tbsp honey
1 tsp vanilla extract
1/2 cup coconut cream or heavy cream (125g)

Topping:
melted dark chocolate

NUTRITIONAL INFO (sliced in 9 equal squares):
198 calories, fat 11.3g, carb 17.1g, protein 8.2g

Preparation:
In a bowl, add the quick cooking oats, ground oats and cocoa powder. Mix it well. Continue adding melted butter, honey and some water, mix with your fingers until the mixture is no more dry and become crumbly.

Line your 8 by 8 inch baking pan with parchment paper. Transfer the oatmeal mixture and press it well into the bottom of the pan. Place it in the fridge to chill while you make the filling.

If too watery, strain your cottage cheese, then blend with hand blender until smooth. Add the peanut butter and whisk the mixture well. Now, add the honey and vanilla extract, and whisk it again.

In a separate bowl, add the coconut cream and whisk until stiff.

Pour the mixture into the pan and spread it evenly. Gently fold into the peanut butter mixture. Spread over the oatmeal crust.

Let it cool for 4 hours or overnight.

Using a sharp knife cut into 9 or 16 bars.

Drizzle with melted dark chocolate and serve.
