Making KimChi-- From the Farm to the Fridge
2 Views · 1 month ago

⁣KimChi is a much loved fermented side dish among Koreans, and has become quite famous worldwide for its health benefits and unique taste. Traditionally, kimchi was (and still is) kept in clay pots inside the earth or a cool environment, but these days, most likely kept in kimchi refrigerators (controlled-temperature refrigerators, for the specific needs of kimchi, one of which is, they get quite pungent--best to be stored seperate from other foods). There, it will age well and develop a good, healthy fermented vegetable dish. But whether fresh or aged, each have their own unique taste and health benefits.

Easy Minestrone Soup Recipe
37 Views · 12 months ago

In today's video I'm going to show you step by step easy minestrone soup recipe.

In fact, I recorded this video to let you all know why minestrone is the best soup ever.

With that, here's what you'll learn in this video:

First, I'll show you how to use leftover vegetables to create something delicious and satisfying like this soup. Any leftover vegetables can go in, I even like to use the broccoli stem.

Then, you'll learn what gives this soup its deep, rich flavor in just a little over half an hour. Olive oil, vegetables, basic seasonings (and of course some bacon) is all you need to boost flavor to the ultimate.

Also, when cooking minestrone it is important to add vegetables gradually, because you don't want to overcook it.

Finally, at the end of cooking it's common to add some pasta to make it even more hearty. What I like to do is to add handful or two of broken spaghetti or basmati rice. If you're looking for more low-carb soup options skip adding pasta or rice.

You can eat minestrone soup on its own, but it's even more special when served with some olive oil and grated parmesan cheese on top.

For rice salad:
2 cups cooked rice

Place the rice in the pot or rice cooker, and cook according to the package direction.

In a blender or food processor, add all the pesto ingredients. Process until smooth.

In a large bowl add cooked rice and homemade pesto. Mix well until combined. Do this until the rice is still quite warm.

Serve warm or cold.

Easy Potato and Leek Soup

Today you're going to learn how to make healthy potato and leek soup.

It's so smooth and full of flavor, just a wonderful way to enjoy leeks.

This rich and creamy potato leek soup is ready in just 30 minutes, and it's good served hot or cold.

In this video I'm going to show you:

First is the right way how to trim leeks for soup, using just the white and light green parts.

Next are the 3 tips how to use leftover green parts of the leeks. Anyway, do not disard them.

Also there's a quick recipe on how to make an oat croutons, which you can use to sprinkle over the soup. It's just a healthier option instead using the bread croutons.

Finally, I will serve the soup in 3 different ways. First, topped with garlicky oat croutons. Second is with sliced green onions. And the last is adding a crumbled crispy bacon on top.

SUBSCRIBE and learn how to eat healthier and spend less money on groceries!

3 large leeks, finely chopped
1 stick butter (113 g)
1 pound chopped potatoes
6 cups chicken or vegetable stock
1 bay leaf
salt and black pepper, to taste
1 cup heavy cream
1/2 tsp grated nutmeg
2 tbsp lemon juice

Melt the butter in a large pot, over medium-low heat. Add the leeks and saute for 10 minutes, until softened. Season with salt and black pepper. It's important to cook leeks on low heat, because you don't want them to brown.

Add the potatoes, chicken stock and bay leaf. Bring to a boil, reduce heat to medium-low and let it simmer for 15 minutes, or until potatoes are fork tender.

Fish out the bay leaf. Blend the potatoes and leeks into a creamy soup, using an immersion blender.

Finish the soup with heavy cream, grated nutmeg and lemon juice. Stir well to combine.

Serve with oat croutons, sliced green onions or crumbled crispy bacon.

1 cup quick oats
2 cloves garlic, finely sliced
3 tbsp olive oil
1 tbsp maple syrup
pinch of salt and black pepper

In a bowl mix all ingredients together.

Spread the oats onto a baking sheet and bake inside the oven for 15 minutes at 350 degrees, until lightly brown.

Easy Ricotta Cheese Fritters 3 ways | Homemade ricotta cheese
21 Views · 12 months ago

Ricotta cheese fritters make such a fantastic healthy and light weeknight dinner.

In this video I'm going to show you how to make these easy and lemony fritters in three different ways.

First, I'm going to make a simple tomato sauce, which is so better option then using jarred tomato sauce, and it's done in just 15 minutes.

If you don't have a time to make any tomato sauce on your own, serve your ricotta fritters on top of rocket salad or slices of fresh tomato.

I prefer to gently fry the fritters in olive oil, because of the crust, but you can bake these inside the oven too.

Next, you'll learn how to make ricotta cheese on your own. Few simple steps and only 3 ingredients is more then enough to enjoy beautiful and creamy homemade ricotta.

Finally, I'll show you how to replace plain wheat flour in your cooking. What I love to do is to add ground oats in my recipes instead of plain flour. You'll see how to turn your oats into oat flour using three simple methods and kitchen tools you already have in your kitchen.

Enjoy this simple, healthy and cheap weeknight dinner.

Fried Polenta Cakes

Today you're going to learn how to make fried polenta cakes.

I probably don't need to tell you that polenta is so cheap and easy to make. But let me show you how to turn polenta into something really delicious the whole family will love.

Making fried polenta doesn't require much time and you can make it two or three days earlier (the cooking part of the recipe).

First step is cooking polenta properly, not too watery and not too stiff, you'll only need four ingredients here.

Next, we have to shape and chil polenta in order to cut it into single pieces. To do that you'll need to place polenta into the fridge for at least 2 hours. And I'm going to show you the easiest way to do that.

Also, you'll see how to fry polenta cakes in order to have crispy edges.

When frying the polenta is done, you can choose to prepare one of the three quick 10-minute toppings I suggest.

Each one of the sauces is delicious in its own way and works so great with polenta.

Quick tomato sauce, easy mushroom ragout or sauteed white beans is what I suggest and what I like to eat with polenta, but feel free to serve these cakes with anything you desire.

Cherry Cheesecake Ice Cream

Today you're going to learn how to make homemade cheesecake ice cream.

This cherry ice cream is so delicious and so easy to make. And the good thing about this homemade ice cream recipe is that you don't need an ice cream maker to enjoy this.

Here's what you'll learn in today's video:

First, I'll show you how to make homemade sweet condensed milk. It's an option for this recipe, you can use a can of store-bought condensed milk, this was an experiment I did while making the ice cream.

Next, you'll see how to make the ice cream custard using a simple hand mixer.

Also, I'm making a quick cherry pie filling for this recipe. You can make it on your own and you'll need just 10 minutes. In a small saucepan add 2 cups of pitted cherries and 1 tablespoon of honey, bring to a boil and gently cook for 10 minutes. It's that simple.

Finally, you'll see how to layer the ice cream and after at least 4 hours in the freezer you'll enjoy this sweet and sour ice cream.

Here I suggest 3 ways to eat the cheesecake ice cream. First, with some melted chocolate on top (use any chocolate you prefer, I did it with dark chocolate). Second, with chopped roasted hazelnuts. And lastly, with the oatmeal cookie crumbs.

SUBSCRIBE and learn how to eat healthier and spend less money on groceries!

2 cups heavy cream
1 cup cream cheese
1 1/4 cup sweet condensed milk
1 tbsp lemon juice
1 tsp vanilla extract
2 cups cherry pie filling

In a bowl, combine cream cheese, sweet condensed milk, lemon juice and vanilla extract.

In another bowl, pour the heavy cream and whisk until soft peaks form.

Fold the whipped cream into the cream cheese custard, mixing gently with the spatula.

Put in the freezer for about 4-8 hours.

Remove from the freezer and let it sit on room temperature for about 30 minutes.

Scoop some ice cream into the ice cream bowls, top with your favorite topping and dig into it.
