Sweet Potato and Chickpea Curry Recipe

In fact, this is the best vegetable curry I've ever had, it's healthy, delicious, easy to make and so flavorful!
So, here's what you'll learn in this video:
First, I'll show you what is important to do if you want to make a nice and thick curry sauce.
Next, we have step by step instructions on how to cook vegetable curry, starting from frying the onions to the finished dish.
For this easy vegetable recipe I use homemade curry powder, instead of store bought powder, and you can do the same, it's so simple. Everything you need is ground coriander, ground cumin, paprika, turmeric, cayenne pepper and ground ginger.
If you want to turn this recipe into a vegan dish, just use coconut milk instead of chicken stock and Greek yogurt.
It is a very common practice to eat this dish with rice or naan, or any other Indian flatbread such as chapati and roti. But I decided to serve this curry with three different side dishes: cooked white rice, sauteed swiss chard and broccoli and quick cucumber salad, it's your choice.
And, in case you have leftovers this is the best way to use it tomorrow. Heat it up, add some liquid (chicken stock or coconut milk) and blend it into a creamy soup.
