Next, you'll see how to fry the pancakes, it's important to cook the pancakes over the low heat.
Here I suggest 3 ways to serve the oat pancakes. First, with maple syrup, strawberries and piece of butter on top. Second, with sour cream and spoonful of berry jam. And lastly, with a homemade applesauce.
For this quick applesauce you're gonna need 3 apples. Peel and roughly chop the apples. Transfer to a small saucepan, add 1/2 cup water and some honey, depends on how sweet the apples are. Bring apples to a boil, cover and cook for 10 minutes. Using an immersion blender blend the apples into a sauce.

2 1/2 cup ground oats (oat flour)
1/4 tsp salt
2 tsp baking powder
1 tsp cinnamon
1/2 tsp ground nutmeg
2 cups buttermilk
2 tbps butter, for frying
In a bowl, combine wet ingredients, eggs and buttermilk.
In another bowl, combine together the dry ingredients, ground oats, baking powder, cinnamon, salt and ground nutmeg.
Pour dry ingredients into the wet ingredients, mixing together to combine. Set aside for 10 minutes, in order for oats to absorb the excess moisture (you don't want a runny pancake batter).
Heat your pancake skillet over low heat and melt teaspoon of butter. Spoon the pancake batter onto the skillet. Cook for about 3 minutes, until the bubbles form over the surface of the pancake, then flip it over, add some butter if needed and cook for another 2-3 minutes.
Serve the pancakes with maple syrup, strawberries and some butter on top. Also you can top the pancakes with sour cream and your favorite berry jam, or appleasauce.
