These healthy fries are the ultimate snack and great side dish in the place of grains or potatoes.




For fries:
1 pound pumpkin, 1/2 inch slices
2 tbsp cornstarch
2 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp cayenne pepper
salt to taste

For homemade ketchup:
1 cup tomato paste
1 tbsp honey
2 tbsp apple cider vinegar
1 tsp mustard
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp black pepper
1 cup water

For the homemade ketchup, in a bowl add all the ingredients and mix to combine.

Preheat your oven to 450 degrees.

For the pumpkin fries, peel the pumpkin of your choice and using a sharp knife cut into 1/2 inch french fry like pieces.

Transfer the pumpkin slices into a large bowl and sprinkle with cornstarch, toss to combine.

Drizzle with olive oil and add your spices, and mix one more time to combine.

Place the pumpkin slices on a lined baking sheet. Make sure to leave enough room between, an overcrowded baking sheet will give you steamed pumpkin fries rather than crispy roasted.
