No Bake Cheesecake Bars Recipe

3/4 cup quick cooking oats (70g)
1/2 cup ground oats (50g)
1 tbsp cocoa powder
2 tbsp melted butter
1 tbsp honey
2-3 tbsp water

1 cup cottage cheese (250g)
1/3 cup peanut butter (85g)
2 tbsp honey
1 tsp vanilla extract
1/2 cup coconut cream or heavy cream (125g)

melted dark chocolate

NUTRITIONAL INFO (sliced in 9 equal squares):
198 calories, fat 11.3g, carb 17.1g, protein 8.2g

In a bowl, add the quick cooking oats, ground oats and cocoa powder. Mix it well. Continue adding melted butter, honey and some water, mix with your fingers until the mixture is no more dry and become crumbly.

Line your 8 by 8 inch baking pan with parchment paper. Transfer the oatmeal mixture and press it well into the bottom of the pan. Place it in the fridge to chill while you make the filling.

If too watery, strain your cottage cheese, then blend with hand blender until smooth. Add the peanut butter and whisk the mixture well. Now, add the honey and vanilla extract, and whisk it again.

In a separate bowl, add the coconut cream and whisk until stiff.

Pour the mixture into the pan and spread it evenly. Gently fold into the peanut butter mixture. Spread over the oatmeal crust.

Let it cool for 4 hours or overnight.

Using a sharp knife cut into 9 or 16 bars.

Drizzle with melted dark chocolate and serve.
