Here's what you'll learn in today's video:

First, I'll show you two methods how to pre-cook the cauliflower before baking. You want to do that because if you don't then the cauliflower may be a bit raw at the end.

Next, you'll see how to make crispy bacon in the skillet, without being soggy or chewy. Done in 5 minutes, without an oven and it works every time.

Then, I show you step by step recipe for this healthy casserole. From cheese mixture (consisted of grated cheddar cheese, heavy cream and cream cheese) to finish with bacon.

You can eat the baked cauliflower as it is, or you can serve it with some salad. I suggest eating it with chopped green onions on top, or with some arugula salad on side, or alongside some chicken.

Also you can eat it when on a low carb or keto diet.

This recipe is great for using leftover cheese you may have in your fridge.

And remember, do not throw away the cauliflower leaves, instead turn them into a salty snack, and in this video you can learn how to do that.

CHEESY CAULIFLOWER CASSEROLE RECIPE

Ingredients:
1 large head cauliflower
1 ½ cup grated cheddar
1/2 cream cheese
1/2 cup heavy cream
6 slices bacon, chopped and fried
2 green onions, chopped
1/4 tsp ground nutmeg
Salt and black pepper, to taste
1 tbsp butter

Preparation:
Preheat oven to 350 degrees. Butter the baking dish.

In a large pot of boiling water, add salt and cauliflower florets. Let cook until they start to soften, for about 5 minutes. Drain and rinse the cauliflower under cold water.

Meanwhile, in a large bowl, mix together the cheddar, cream cheese, heavy cream, nutmeg, half of the bacon, green onions, adding a pinch of salt and black pepper.

Add the cauliflower into the cheese mixture, stirring it gently to combine.

Spread mixture into prepared baking dish. Top with remaining bacon and some cheddar cheese. Bake for 25 minutes.
