Ricotta cheese fritters make such a fantastic healthy and light weeknight dinner.

First, I'm going to make a simple tomato sauce, which is so better option then using jarred tomato sauce, and it's done in just 15 minutes.
If you don't have a time to make any tomato sauce on your own, serve your ricotta fritters on top of rocket salad or slices of fresh tomato.
I prefer to gently fry the fritters in olive oil, because of the crust, but you can bake these inside the oven too.
Next, you'll learn how to make ricotta cheese on your own. Few simple steps and only 3 ingredients is more then enough to enjoy beautiful and creamy homemade ricotta.
