Green Rice with Pesto

Here's what I cover in today's video.

First, I show you the most simple method to make a homemade pesto sauce. All you need to do is to place all the ingredients together and blend until you get the desired consistency.

Next, you need to cook the rice according to the package directions. How simple it is.

Everything you have to do to make this salad complete is to combine the pesto with cooked rice and serve alone or with your favorite topping.

Here I suggest cherry tomatoes, cubed mozzarella cheese or hard boiled egg to your desired level of softness.



For pesto:
1/3 cup walnuts
1 clove garlic
1 cup fresh basil leaves
1/2 cup olive oil
1/2 cup grated parmesan cheese
salt and black pepper, to taste

For rice salad:
2 cups cooked rice
1/2 cup cherry tomatoes, halved
1/2 cup mozzarella cheese, cubed
2 hard boiled eggs


Place the rice in the pot or rice cooker, and cook according to the package direction.

In a blender or food processor, add all the pesto ingredients. Process until smooth.

In a large bowl add cooked rice and homemade pesto. Mix well until combined. Do this until the rice is still quite warm.

Serve warm or cold.

Top with cherry tomatoes, mozzarella cheese or hard boiled egg.
