How to Make Chicken Salad with Greek Yogurt

Packed with lean chicken meat and fresh veggies, this salad is a great source of protein and fiber.

The base for this salad is grilled chicken (juicy and tender), and tomatoes and cucumbers, but you can make it with any fresh vegetables you like.

Here's a quick list of what you're about to learn:

First, I'll show you how to quick marinate the chicken breasts - the Greek style with white wine vinegar and dried oregano.

Next, you'll learn how to make the best homemade Tzatziki I've ever tried, the secret is in the white wine vinegar and fresh dill.

Finally, I'll show you how to make two other salad dressings, which taste so good in this salad. The creamy Greek yogurt dressing, and tangy lemon caper dressing.

GREEK SALAD WITH CHICKEN RECIPE

Ingredients:

2 medium sized chicken breasts, skinless-boneless, halved to make four fillets
2 cups chopped tomatoes
2 cups chopped cucumbers
1/2 cup sliced red onions
1/2 cup chopped black olives

Chicken marinade:

1/3 cup Greek yogurt
1/4 cup olive oil
4 cloves garlic, minced
2 tsp dried oregano
2 tbsp white wine vinegar
1 tsp salt
1/2 tsp black pepper

Tzatziki dressing:

1 large cucumber
1 cup Greek yogurt
1/2 clove garlic, minced
2+1 tbsp white wine vinegar
3 tbsp olive oil
1 tbsp fresh dill, finely chopped
salt and black pepper, to taste

Greek yogurt dressing:

1/2 cup Greek yogurt
1 tbsp white wine vinegar
1 tsp honey
2 tbsp olive oil
1/2 tsp dried oregano
pinch of salt and black pepper

Lemon caper dressing:

3 tbsp lemon juice
1 tbsp mustard
1 tbsp capers, minced
1 tsp honey
1/4 cup olive oil
1 tbsp chopped parsley
salt and black pepper, to taste

Preparation:

In a large bowl, combine all marinade ingredients, add chicken fillets and mix well. Set aside for 30 minutes to 3 hours.

For homemade tzatziki, peel and grate the cucumber, sprinkle with some salt and 1 tbsp white wine vinegar, mix and set aside for 10 minutes.

Squeeze out as much excess liquid as possible and combine the cucumbers with other tzatziki ingredients.

For Greek yogurt dressing and Lemon caper dressing, simple combine all listed ingredients.

Chop all the veggies and proceed to the final step which is grilling or frying the marinated chicken.

Remove the chicken out of the fridge and scrape the marinade off the fillets.

In the skillet (or on the grill), over medium high heat, cook the chicken for 4 minutes on each side.

Let sit covered for a few minutes for juices to set.

Slice the chicken and assemble the salad.
