TUNA BAKE RECIPE

Ingredients:

For the mashed potatoes:
2 pounds peeled and diced potatoes (900g)
3 tbsp butter (45g)
1/2 cup milk (100ml)
1/2 tsp black pepper
1 tbsp salt (for boiling potatoes)

For the tuna mixture:
2 cans tuna
3 scallions, chopped
1 cup frozen peas (150g)
1/2 cup sweet corn (90g)
1/2 tsp salt
1/4 tsp black pepper
1/4 cup cooking cream (60g)

1 cup grated cheddar cheese (120g)

Preparation:

For the mashed potatoes, add the potatoes into a pot and cover with water.

Add the salt, bring to a boil and simmer until the potatoes are fork tender.

Mash the warm potatoes with potato ricer or masher.

Add the butter, milk, season with salt (if needed) and freshly ground black pepper, and mix until smooth. Set it aside.

Drain the tuna and add it to a large bowl. Continue adding scallions, frozen peas, corn, salt, black pepper and cooking cream. Stir well to combine.

Transfer the tuna mixture into a casserole pan.

Sprinkle the grated cheddar cheese over the mixture.

Top with the mashed potatoes.

Bake in the oven for 25 minutes at 400 degrees.
